Inside Soumah's Cellar Door: New Unica Starts in the Yarra Valley
We've had a soft spot for Soumah for a long time. David was pouring their wines as sommelier well before we were in the Enomatic business. So when we took over Australian distribution and Soumah came on board as a customer, it felt like a full-circle moment.
They already had three 2-bottle Enomatic units running at the cellar door. And recently, they added two Unica Start 8 Black Charms.
Sixteen more bottles. Perfectly preserved. And looking the part.
Why the Start 8?
The Unica Start is a staff-operated system – no cards, no software, no complexity. Your team presses the button, the wine pours. What it does offer is reach: eight bottles per unit, each held under inert argon gas, each available by the glass without waste or worry about what's been sitting open.
For a cellar door like Soumah's, that matters. When you're showcasing your own label, the conversation at the counter matters just as much as what's in the glass. Having 16 more wines available to pour by the taste or glass – still fresh, still showing their best – changes what that conversation can look like.
The Black Charm finish is the newest addition to the Unica Start range, and it suits the aesthetic of a modern cellar door. Matte black, clean lines, and enough presence to make people stop and look.
