What's the difference between the Unica Roma and Unica Start?

The key difference is self-service capability. The Unica Roma includes wine card functionality, allowing guests to pour their own wine using pre-loaded credit or a running tab.

The Unica Start has no card reader, so it's staff-operated only – better suited to behind the bar or a cellar door counter.

How does the self-service work?

Guests are issued a wine card that's either pre-loaded with credit (Card Generator) or used to track a running tab settled at the end of their visit (EnoSoft Professional). You choose which model suits your venue.

Can customers pay with their own credit card instead of a wine card?

Not directly – but if your venue has an existing app or card system, the Unica Roma supports API integrations.

You can build a custom QR or RFID-based setup that lets guests pour using stored credit from your own platform.

How long does wine stay fresh once a bottle is opened?

Up to 30 days. The Unica Roma uses food-grade argon gas to displace oxygen the moment a pour is made, keeping wine at peak freshness from the first glass to the last – weeks after the bottle was opened.

Can I run it as a staff-operated machine without wine cards?

Yes. The Unica Roma works both ways – with staff controlling pours, or in full self-service mode with wine cards. You can start staff-operated and introduce self-service later without any hardware changes.

We find the most common use case for staff-operated Unica Romas is in retail environments where the unit is out on the floor with full visibility, but only staff are able to pour wine from it.

What gas does it use, and where do I get it?

The Unica Roma uses food-grade high-purity argon, available from industrial gas suppliers across Australia such as BOC and Supagas . The machine comes with a gas regulator and fittings – you'll just need to source the argon cylinder locally.
