More wines by the glass. Less money down the drain.

Wine Dispensers for Bars, Restaurants & Pubs

Every bottle you open by the glass is a calculated risk. If it sells, great. If it doesn't, you're pouring profit into the sink – and that risk is exactly why most venues play it safe, sticking to a handful of wines they're confident will move.

An Enomatic wine serving system changes that equation. Argon gas preservation keeps open bottles fresh for up to 21 days, so you can offer more wines by the glass, at better margins, without the waste eating into every shift.

The real cost of your current by-the-glass list

Most venues know wine waste is a problem. Fewer know how much it's actually costing them.

Every bottle you open for by-the-glass service that doesn't sell by close is a write-off. Add staff over-pouring, the bottles you don't open because you're not confident they'll move, and the margin you're leaving on the table by playing it safe – and the number gets uncomfortable quickly.

The result is a by-the-glass list that looks a lot like everyone else's. The same reliable pours. Nothing that makes a customer stay for another glass, or come back tomorrow because they want to try something they've never had before.

Open your best bottles. Keep them fresh for 21 days.

An Enomatic wine serving system uses high-purity argon gas to preserve every open bottle the moment it's loaded. A bottle that's been open for two weeks tastes the same as it did on day one.

With an Enomatic behind your bar, you can:

  • Put wines on your by-the-glass list that you'd never risk opening before – premium, rare, or high-margin bottles
  • Serve every pour at the right temperature, every time – Enomatic machines actively control serving temperature
  • Eliminate over-pouring with pre-set pour sizes, calibrated to the ml
  • Reduce the labour time spent on wine service – consistent, fast, and staff don't need to be wine experts to pour confidently
  • Give customers a reason to stay for another glass, and come back tomorrow

Run the numbers on your current setup

Most venues are losing more than they realise. Our ROI calculator lets you put in your own numbers – bottles opened per week, your average glass price, your estimated waste percentage – and see exactly what your current setup is costing you in lost revenue each year.

Wine Wastage Calculator

Adjust the below assumptions to reflect your venue.

Estimated revenue lost to wastage:

  • $0 per week
  • $0 per month
  • $0 per year

Typical wastage ranges from 10–20% due to over-pours, oxidation and comps. On average, 10% wastage would be half a glass per bottle opened, whereas 20% would be one glass per bottle opened.

Which Enomatic works best for your venue?

The right setup depends on how your bar or restaurant operates — and how you want wine to work in your space.

Behind the Bar

More wines on your list, no complexity

The Unica Start sits behind the bar, operated by staff. One press of a button, wine pours – calibrated, consistent, at the right temperature. No cards, no software, nothing your team needs to be trained on beyond pressing a button.

It comes in 2, 4, or 8-bottle configurations. Most bars and restaurants start with a Unica Start 4 or 8, which gives them enough range to meaningfully expand the by-the-glass list without changing how the bar operates.

Best for:

  • Restaurants wanting to expand the by-the-glass range without the waste risk
  • Bars and pubs adding a premium wine option alongside the usual pour
  • Any venue where staff operate the wine service and self-service isn't the model

Self-Service

Wine as an experience, not just a menu item

The Unica Roma is the machine that turns wine service into a point of difference. Customers use access cards to choose their own pours – a taste, a half glass, or a full pour – from a range you've curated. The machine handles the preservation, the temperature, and the calibration.

For wine bars and venues where wine is the focus, this is the setup that creates the "choose your own adventure" experience that makes people stay longer and spend more.

Best for:

  • Wine bars and wine-focused restaurants where range and discovery are the point of difference
  • Hotel lounges and club floors where self-service suits the "help yourself" culture
  • Venues running a membership or loyalty program tied to wine access
  • High-volume venues wanting to serve more wine with less staff involvement per pour

How different venues use Enomatic

Restaurants

Expand the by-the-glass list to include the wines your sommelier actually wants to feature – not just the ones cheap enough or well-known enough to open without anxiety.

A Unica Start behind the bar means more range, less waste, and more consistent pours across service.

Bars & Pubs

Add a premium wine option without adding complexity to the bar operation. The Unica Start is the simplest machine we sell – staff press a button, wine pours. No ongoing training, no cards, no software.

If you want a step up, a Unica Roma with a card system lets you offer a full by-the-glass range the customer navigates themselves.

Self-Service Wine Bars

This is the machine wine bars are built around. A Unica Roma gives you self-service, customer profiles, flexible payment (tab, pre-paid, or credit limit), and reporting on what's being drunk. Multiple units running side by side means your range is limited only by what you want to offer.

Hotels & Resorts

Guests in a lounge or on a club floor want quality, variety, and the sense that the venue has thought about what they're drinking.

Enomatic delivers a premium self-service experience that suits the "help yourself" culture of high-end hotel hospitality: presentation-ready, temperature-controlled, and low-maintenance once it's running.

Clubs & Members' Venues

A card or membership system pairs naturally with the Unica Roma. Members tap on, pour their selection, and their spend is tracked against their account. Whether it's a sporting club, a private members' club, or a wine club, the setup can match your membership format exactly.

How much does a commercial wine dispenser cost in Australia?

The Unica Start (for behind the counter) starts from $7,200 inc. GST and freight for a 2-bottle unit, up to $18,500 for an 8-bottle unit. Card-operated Unica Roma units start from $18,000.

How long does wine stay fresh in an Enomatic machine?

Around 21-30 days for most wines when preserved straight away with high-purity argon. Compare that with 24 hours for an open bottle without preservation. That single difference fundamentally changes the economics of running a tasting program – you can open your best bottles without gambling on selling enough that day.

Do I need professional installation?

The Unica Start is designed for self-installation – it's plug-and-play. No technician required (although we can arrange this if you would like professional installation and staff training).

The Unica Roma system requires professional installation, which we handle directly across Australia. We'll discuss this with you when you book a call with us.

What gas do I need to run an Enomatic?

High-purity argon. We recommend argon for slightly better preservation than nitrogen. Ongoing cost is roughly $5 per week.

We recommend SupaGas as a reliable Australia-wide supplier.

Can an Enomatic reduce wine waste in a restaurant or bar?

Yes – that's the primary reason most restaurants and bars invest in one.

Open bottles that don't sell within a shift are preserved until they do. Combined with pre-set pour sizes (which eliminate over-pouring), most venues see a meaningful reduction in waste within the first few weeks of use.

Use our wastage calculator to run the numbers on your current setup.

Does it control serving temperature?

Yes – Enomatic machines actively control the serving temperature of each wine. Some units are dividable, meaning you can run reds and whites at different temperatures in the same machine. This is one of the key differences between Enomatic and systems like Coravin, which serve at ambient temperature.

Do staff need training to use it?

The Unica Start requires almost none – staff press a button, wine pours.

The Unica Roma self-service system requires installation and some training on the software, which we provide. Once it's set up and staff understand the basics, it runs with very little ongoing training requirement.

We also give you all the online tutorials to ensure that when staff move on, retraining is very simple.

Is Enomatic better than Coravin for a bar or restaurant?

Coravin is designed for occasional single-bottle pours, typically in a fine dining or retail setting. For a venue running a comprehensive by-the-glass program – multiple wines, calibrated pours, temperature control, and staff who need a fast, repeatable process – Enomatic is built for the volume and consistency commercial service demands.

Coravin's per-capsule cost also becomes significant at scale (~US$1 per pour); Enomatic uses bulk argon at around $2-5 per week regardless of how many bottles you're running.
